Your first plant-based week

Seven days, seven moves. Nothing here asks you to throw anything out or buy a cupboard of new ingredients. Do one a day and by Sunday you will have cooked more plants than most people manage in a month.

The week

  1. Swap one thing. Oat milk in your coffee, or beans instead of mince in whatever you were making anyway.
  2. Cook one bean meal. A can of black beans, cumin, lime, tortillas. Ten minutes.
  3. Eat one breakfast that is not toast. Overnight oats take three minutes the night before.
  4. Read one label. Look at what is actually in the thing you buy every week.
  5. Make one lunch you can take with you. A grain bowl holds up until 1pm.
  6. Try one ingredient you have never cooked. Tofu, tempeh, lentils — pick one.
  7. Repeat the meal you liked most. That is the one that will stick.

If you only do one thing

Do day two. A pot of beans is the single highest-leverage plant-based meal there is: cheap, fast, filling, and it answers the protein question before anyone asks it.
